Vitamix Spreads Solution to the Peanut Butter Scare

OLMSTED FALLS, OH – January 21, 2009 –Peanut butter is arguably one of the most popular foods in America, especially with children. A recent survey showed the average American eats 1,500 peanut butter and jelly sandwiches before graduating from high school.

Nevertheless, the current recalls of peanut butter products due to salmonella contamination have left kids and adults wondering what’s safe to put in their lunches.

Vitamix offers a healthy solution: fresh, homemade peanut butter.

With a new Vitamix 5200, you can just blend raw peanuts to make perfectly creamy, delicious peanut butter at home—without added sugar, hydrogenated oil, wasteful packaging, or potential for contamination.

In fact, the Vitamix 5200 can do the work of 10 kitchen appliances and perform over 50 different processes without any separate attachments. These include five that no other single kitchen appliance can handle: making ice cream, grinding grains to make flour, kneading dough, making whole food juice – even making piping hot soups heated by nothing more than the blades spinning at 240 MPH. The Vitamix 5200 is also the first blender to introduce a BPA-free container made from a new shatterproof "copolyester" material.

Peanut or Cashew Butter

Yield: 1 1/4 cups (300 mL)

Speed: Variable to High
Time: 1 minute
(see Caution)

3 cups (440g) unsalted roasted peanuts or cashews

Directions:
Pour nuts in the Vitamix container. Secure 2-part lid. Select VARIABLE, speed #1. Insert tamper through lid opening. Turn on machine and quickly increase speed to #10; then to HIGH. Use the tamper to push the nuts into the blades. In 1 minute you will hear a high pitched chugging sound. Once the butter begins to flow freely through the blades the motor sound will change from a high pitch to a low laboring sound. Stop processing. Remove nut butter to a container and store covered.

Note: Refrigerate in airtight container.

CAUTION: Over processing will cause serious overheating to your machine! Do not process for more than 1 minute after mixture starts circulating freely.

Variation: Almond Butter
Substitute roasted almonds. Add oil if necessary, refrigerate and pour off excess oil next day.

If using dry roasted nuts, you may need to add oil. Begin with 3 tablespoons and add more if necessary.
